Chocolate Mini Cupcake

Everyone loves cupcakes! But what about a mini cupcake? I agree, that's the best version of a cupcake! You can use anything you like while baking cupcakes, but the chocolate ones are my favourites, so here is the recipe!




 

Serves: 30

Time: 1 hour 20 minutes

 

batter

1 cup / 180g plain flour

2 tablespoons cocoa powder

1/2 cup / 125g caster sugar

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 egg

1/2 cup / 125ml buttermilk

1/3 cup / 80ml white yoghurt

1/3 cup / 80ml oil

1/3 cup / 80ml water


buttercream

1/2 cup / 100g chocolate chips

2 egg whites

100g caster sugar

1/2 cup / 120g softened butter

 

step 1

Preheat the oven to 180°C/350°F.

step 2

I a bowl whisk flour with cocoa, sugar, baking soda, baking powder and salt together. In another bowl mix the rest of ingredients and add your dry ingredients mixture. Then mix well until smooth.

Fill your baking cups with the batter as you see in the picture and bake them for 20 minutes. Let it completely cool and start with the buttercream.

Melt the chocolate and let it cool a little. In a mixing bowl combine the egg whites with sugar and set the bowl over a saucepan filled with simmering water over medium heat. Do not let the bottom of the egg whites bowl touch the water. Stir slowly and use thermometer. In the end the temperature should read 70°C / 160°F.

Whisk the egg whites mixture for 5 minutes on the highest speed until smooth and fluffy. Wait 5 minutes to let it cool a little and then start whisking again. Cut the butter into small cubes and add them into your egg whites. One at the time. Once the butter is completely mixed in add your melted chocolate and keep whisking for 30 seconds. (If your buttercream is too liquid, put it into fridge for 20 minutes and then start decorating your cupcakes.)

Decorate your cupcakes with buttercream and put into fridge in a airtight box or serve them without cooling.
